The recipe is quite simple:<\/p>\n<ul>\n<li>400 gm flour<\/li>\n<li>1\/2 cup starter (100gm flour, 1\/2 cup water)<\/li>\n<li>1 1\/2 tsp sea salt<\/li>\n<li>1 2\/3 cup water<\/li>\n<\/ul>\n<p><a href=\"http:\/\/www.justinmcclellan.com\/blog\/wp-content\/uploads\/2018\/03\/IMG_9381.jpg\" rel=\"attachment wp-att-367\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-367 alignright\" src=\"http:\/\/www.justinmcclellan.com\/blog\/wp-content\/uploads\/2018\/03\/IMG_9381-300x300.jpg\" alt=\"IMG_9381\" width=\"300\" height=\"300\" srcset=\"https:\/\/justinmcclellan.com\/blog\/wp-content\/uploads\/2018\/03\/IMG_9381-300x300.jpg 300w, https:\/\/justinmcclellan.com\/blog\/wp-content\/uploads\/2018\/03\/IMG_9381-150x150.jpg 150w, https:\/\/justinmcclellan.com\/blog\/wp-content\/uploads\/2018\/03\/IMG_9381-768x768.jpg 768w, https:\/\/justinmcclellan.com\/blog\/wp-content\/uploads\/2018\/03\/IMG_9381-1024x1024.jpg 1024w, https:\/\/justinmcclellan.com\/blog\/wp-content\/uploads\/2018\/03\/IMG_9381.jpg 1080w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a>Simply combine the starter, flour, and salt in a large mixing bowl.\u00a0You will want to add the water slowly to get a sticky dough that is not too slimy and wet but is also not dusty with dry flour. Let the dough ferment for 12 hours in a warm place. You really want a good ~72 F. If it is cooler in your home, ferment closer to 18hrs. The dough should expand to almost fill the bowl(choose a big bowl!)<\/p>\n<p>The dough is then folded\u00a0into a boule. Flop the dough onto a well floured towel and fold it into itself until you end up with a nice round boule with a somewhat taunt top and the seam on the bottom. If your dough is too\u00a0wet, keep adding flour to the towel as you fold it into the dough. The bread is baked in a dutch oven. Place the dutch oven in while you preheat. After 30-minuted carefully remove the hot dutch oven from the oven and invert the boule into into it. The\u00a0seam should now be up.<\/p>\n<p>Bake covered for 30-40 minutes. Uncover and allow the outside to lightly brown for a few more minutes.
